  • GDL is a food additive used as a sequestrant, an acidifier, or a curing, pickling, or leavening agent.
  • It is a lactone of d-gluconic acid. La Casa’s GDL is pure, white odorless crystalline powder.
  • 300 gram per pack gluconolactone that is used for making soft tofu is enough to coagulate 200 liters of soy milk.
  • Perfect for making Tofu Flower or Tofu from hot soy milk (such as the soy milk made using automatic soy milk makers).
  • Better than nigari becase of no bitter taste and much high coagulation efficiency.
  • Can be used as leavening agent too.
  • The best companion for an automatic soy milk.

 

– Dissolve 0.5 tsp (3 gms) GDL in 3 tsp hot water in a big container.
– Let it rest for 5 minutes.
– Add 2 litres filtered hot soy milk or crushed soybeans & let sit still.
– The soy milk should solidify within 5-15 minutes.
– Serve tofu as per your requirement.
